Fukin - Kitchen cloth for covering rice while it cools

Hangiri – Round flat bottom wooden bowl used to hold rice in the final steps of preparing rice for sushi making. The rice, when removed from the heat source after cooking is placed in the hangiri and tossed with a vinegar dressing. The rice is covered and allowed to cool to room temperature.

Shamoji - A wooden paddle used in the making of sushi rice.

Hocho - Very sharp knives designed specifically for sushi chefs.

Ryoribashi – Chopsticks used in cooking.

Makisu - Bamboo sushi rolling mat.

Makiyakinabe - Rectangular pan for making paper thin omelettes.

Oshizushihako: Wooden mold used in making oshi-zushi.
